Natives of the birthplace of Szechuan cuisine, Chengdu in Szechuan province, southwestern China, Chef Gu, his wife, and his daughter Yvonne Gu bring a combined 90 years of culinary experience to the kitchen. Chef Gu has cooked for a variety of celebrities, including Bill Gates, and was often called upon “to save” struggling Chinese restaurants. With his unique skill set and experience, he has trained numerous chefs in China and the US. Neither Chef Gu nor his wife uses MSG in the preparation of any of the dishes, as the flavors come from the use of high-quality ingredients and masterful cooking skills. After closing Gu's Bistro, which quickly became one of Atlanta's best Chinese restaurants in 2015, the Gu Family opened Gu’s Dumplings in Krog Street Market.
We are back! The Gu family has created another unique dining experience on Buford Highway – Gu’s Kitchen. This new establishment is different from both Gu’s Dumplings and Gu’s Bistro. Look for a more casual setting with new Sichuan “Street Food” items, along with some favorites from Gu’s Bistro and Gu’s Dumplings, including delicious noodles and dumplings.
Q: How long have you been a chef? Chef Gu: 46 years. Q: What made you decide to be a chef? Chef Gu: My mother was a chef and baker, so I was always around food as a child. I observed her cooking a lot, which inspired me to try and imitate her in the kitchen. I didn't realize how creative cooking can be, and I really enjoy the creative side of preparing dishes, including the best Chinese dumplings and noodles. Q: Where were you trained and how difficult was your training? Chef Gu: A famous chef (Chef Zhu) in China trained me for a few years. During my training, I started off by washing dishes to show Chef Zhu how badly I wanted to learn how to cook. I then worked my way up to become his assistant chef. The training involved cooking, baking, and specialty cooking techniques, which I use to create authentic dishes like hot pot and Szechuan-style Dim Sum. Q: What is the hardest part of being a chef? Chef Gu: Although I love what I do, the hours required to maintain a restaurant can be challenging. Besides the hours the restaurant is open, additional time is spent purchasing fresh ingredients, thinking of new dishes, including innovative takes on noodles and dumplings, etc. It can be frustrating at times, but when customers compliment my cooking, it makes it all worth it.
Chef Gu's signature Tea Smoked Duck is a must-try. Popular choices include Zhong-style Dumplings and Dan Dan Noodles. Remember, adding your personal touch makes every dish special.
Q: What is the most essential part of your kitchen/food? Chef Gu: Freshness and cleanliness. My family and I shop for ingredients every day to maintain the freshness and quality of the food, especially when preparing the best Chinese dishes like dumplings and noodles. We also take special care to ensure the kitchen and restaurant are clean. Q: What's your favorite kitchen tool? Chef Gu: Although everything is important, I use my wok and spatula a lot to cook many of my dishes. Q: How do you choose your suppliers and where do you buy your ingredients? Chef Gu: Luckily, my restaurant is located on Buford Highway, so there are plenty of International Farmer's markets nearby. Since freshness and quality are important for making Sichuan cuisine, my family and I purchase ingredients at different places every day. Q: What is the most difficult part of cooking? Why? Chef Gu: The hardest part is combining the colors of the ingredients to create a tasty dish. Sometimes it can be challenging to make the food nutritious, tasty, and visually appealing.
